Recept: Green Smoothie

Jag gillar ofta att börja morgonen med smoothie, men det går i perioder. Just nu är jag inne i en period där jag älskar vår relativt nya juicemaskin, vilket innebär att jag gillar att juica saker som ska ner i smoothien. Just därför delar jag idag med mig av ett recept jag hittade på för ett par dagar sen på en grön smoothie som är lite extra näringsrik och innehåller bra grejer som är lätta att få tag på!

 

Du behöver:
2 kålblad
1 litet rött äpple
½ pkt fryst mango
½ avokado
1 dl vaniljyoghurt
ev. 1 banan
juicemaskin + mixer

 

Ta bort stammen från grönkålsbladet, skär äpplet i fyra bitar och ta ev. bort kärnhuset, kör allt genom juicemaskinen. Tina upp den frysta mangon och skär avokadon och eventuellt en banan i mindre bitar. Blanda samman juicen, mango, avokado, banan och yoghurt i en mixer och mixa slätt. Häll upp på stort glas och njut direkt!

Det går självklart bra att bara mixa ner grönkålen i smoothien också, men uteslut då äpplet för att slippa en grynig smoothie. 

 

Den här smoothien är extra vitaminrik på grund av grönkålen, som innehåller bland annat järn, c-vitamin och a-vitamin! Utöver det är det ju avokadon som innehåller bra grejer som bra fetter och kalium.

Recipe: Breakfast Juice

So this is a quick recipe for you guys! I recently invested in a quite cheap version of a juicer, and that means I've been juicing a lot!

I didn't think I would love it as much as I do, and even if I've just had it for two weeks or so, I've been trying a few combinations! That means I've found a favorite already, and that is what I would like to share with you today.

You'll need:
2 apples
1 orange
1 big celery stick
1 big carrot
1/2 lemon

Cut the peel off of the orange and lemon, so that there's no white left. Cut the apple in 4 or 8 pieces and take away the middle part with the seeds. Peel the carrot and chop off the end where the carrot is attached to the leaves, and then prep the celery stick and take away any brown parts.

Start with the carrot, then the celery stick, the apple, the lemon and then the orange, and put them in the juicer one at a time, or what your juicer can take really. They're all different, so read before you do this.

Then swirl around a bit in the juice container before pouring it in a tall glass or a bottle to take with you!

And that's that with that! The simple, yet extremely tasty breakfast juice with lots and lots of great things in it! I try to do this at least a few days a week, and it's really a great way to start my morning, since it's kind of filling with the vegetables in it.

Pinchos with the girls!
So here's a photo packed post for ya'll! We had an exam, and we've also done the first semester of our program at Uni! So we went out for a celebration, and we did go to Pinchos here in Malmö. They have a great concept where you order via their app, and at certain amounts of money spend you get a free dish! And also, it's tapas, so one dish is like.. maybe a fourth of what you eat, depending on what you order.

The interior is really great, that have all of these bright red lights in the ceiling, the striped walls and the kind of circus theme going on!

And they also have the most amazing drinks! I tried an Elderflower Mojito, and let me tell you, it was GOOD! I also did try two of their "surprise" alcohol free drinks, and they were both the tastiest ever! Alcohol free you think? Yeah, I'm not a big drinker, actually I kind of don't drink at all if I don't feel like something low in alcohol, like a cider or this drink that I would love to order again!

So I went out with some class mates, and I love them. I just do. They're some of the greatest people I've ever known, and I'm so happy for it!

Anyway I ordered in some Chicken fingers with mango raja, cheese balls with chives, sweet potato fries, and some chicken skewers, all of which were great! I actually ordered another round of chicken fingers, hehe.

And also I feel like this is how you know that the night's been a good one: You feel like it's been a good one! And I absolutely feel like this night was a good one. Great friends, great food, great drinks, and a lot of laughs. Could it be any better!?

Recipe: The Greatest Lemon and Coconut Cake

So I found this amazing recipe for a lemon and coconut cake, and I thought I'd share the recipe! I've done this one like four times since I found it, and it's really, really good.

You will need
1 tbsp juice and the zest of 1 lemon
3 eggs
2 dl sugar
2 tsp baking powder
1 tsp vanilla sugar
1 pinch of salt
100 g butter, melted
½ dl milk
1 dl shredded coconut
3 dl wheat flour



Frosting

1 ½ dl powdered sugar

1-2 tbsp lemon juice (or water)


shredded coconut (for garnish)


Put the oven at 180° C. Zest the lemon and squeeze out all of the juice.

Whisk together the eggs and the sugar on high speed until almost entirely white. The longer you whisk, the better the cake. Add baking powder, vanilla sugar, salt, melted butter and milk. Whisk together again.


Add the lemon zest and -juice, shredded coconut and flour. Whisk again, but not for too long. Just enough for it to combine evenly. Butter a bread pan, approximately 10x30 cm large. Pour the batter in it and put it in the lower part of the oven. Bake for 30-50 minutes. I've had various results with the time, but about 50 for the first one, and then 30 for the next one. Just check with a stick to see when it's really done.

Let the cake cool down in the bread pan, for at least 30 minutes (if you can't wait any longer that is). Put it on a plate and let it cool some more while you mix the powdered sugar and the lemon juice from when you pressed the lemon. Pour over the cake, slowly and a little at a time, and then sprinkle some more shredded coconut on it. Eat while fresh, although this one is delicious even a few days after it's baked!

A great lunch at Vapiano

When my best friend visited me in Malmö las time, we had an amazing lunch at Vapiano. Here in Malmö they have their restaurant in Emporia, which is a big shopping centre just outside of town. I had their amazing Pesto Rosso pasta, with roasted pine nuts and ricotta cheese. And also the best soda there is - San Pellegrino Aranciata Rosa, which is blood orange flavoured.

Nowadays I mostly just study. I have a big exam coming up, and also a few smaller assignments that needs to be done. I have just one lesson this week, but I'm meeting up a friend to study aswell. Hopefully this exam is easier than the last one, that I failed by 8 points. A bit annoying, but what can one do? Re-exam is in August, so I'm crossing my fingers I've learnt stuff until then.
