Recipe: The Greatest Lemon and Coconut Cake

So I found this amazing recipe for a lemon and coconut cake, and I thought I'd share the recipe! I've done this one like four times since I found it, and it's really, really good.

You will need
1 tbsp juice and the zest of 1 lemon
3 eggs
2 dl sugar
2 tsp baking powder
1 tsp vanilla sugar
1 pinch of salt
100 g butter, melted
½ dl milk
1 dl shredded coconut
3 dl wheat flour


1 ½ dl powdered sugar

1-2 tbsp lemon juice (or water)

shredded coconut (for garnish)

Put the oven at 180° C. Zest the lemon and squeeze out all of the juice.

Whisk together the eggs and the sugar on high speed until almost entirely white. The longer you whisk, the better the cake. Add baking powder, vanilla sugar, salt, melted butter and milk. Whisk together again.

Add the lemon zest and -juice, shredded coconut and flour. Whisk again, but not for too long. Just enough for it to combine evenly. Butter a bread pan, approximately 10x30 cm large. Pour the batter in it and put it in the lower part of the oven. Bake for 30-50 minutes. I've had various results with the time, but about 50 for the first one, and then 30 for the next one. Just check with a stick to see when it's really done.

Let the cake cool down in the bread pan, for at least 30 minutes (if you can't wait any longer that is). Put it on a plate and let it cool some more while you mix the powdered sugar and the lemon juice from when you pressed the lemon. Pour over the cake, slowly and a little at a time, and then sprinkle some more shredded coconut on it. Eat while fresh, although this one is delicious even a few days after it's baked!
